From October 2nd we will start with our autumn proposals
Autumn is not a season, but a state of mind." (Nietzsche)
The cold has arrived, bringing with it autumnal rains. As we walk, we notice a greenness teetering between two seasons that will lead to an explosion of colors. Our maple tree has turned red, the garden is still green but will begin to tend towards the magical colors of autumn.
“Nature every year provides an immense harvest that is not at all limited to what we eat. There is ‘another festival of fruits, and on an infinitely larger scale’ that nourishes our taste for beauty in a specific way.” Thoreau, Henry D. Autumn Colors
We begin to feel the scent that will accompany us this season, and with our mouths watering, we prepare to savor pumpkin, leeks, beets, broccoli, chestnuts, mushrooms, truffles...
Now is the time to make room for the most autumnal flavors.
Seasonal ingredients are the stars of our menu. They will be transformed in the hands of our chefs into moments to savor.
